In the Kitchen — Fish with White Sauce

In the Kitchen Fish with White Sauce

We have prepared for you, Madam, in the modern kitchen corner, a new dish that will greatly please your guests at your next dinner party. It is an easy and delicious dish, and one in which you can exercise your ingenuity to a considerable degree. The details are as follows:

Take a large fish and bake it in the oven in the usual manner; then clean it of bones and scales, and place the flesh either in one large dish of the kind that withstands the heat of the oven and can at the same time be brought to the table... or, if you prefer, place the flesh in small dishes according to the number of your guests — one dish for each guest.

After that, make a white sauce: set a spoonful of butter over the fire and add to it a quantity of white flour. Stir well, and keep adding milk until the mixture becomes a smooth liquid — and of course do not forget a little salt to add to the sauce. Then put in a generous quantity of grated cheese and a little Worcestershire sauce, which gives it a touch of heat and flavor. Let the mixture boil briefly over the fire, then take it off and put a little of it over all the fish in the dishes, or in the large dish.

Next, take some boiled potatoes and mash them well with a little butter and salt, and keep beating until the mixture becomes very smooth. Then decorate the top of the dish or dishes with this mixture, in whatever design you wish — make use of a decorating tube. Finally, place the dish or dishes in a moderately hot oven until the top browns, and serve it to your guests hot. You will see, Madam, that it will win their great admiration.
