In the Modern Kitchen — Good Biscuits

Good Biscuits

Here, Madam, is this delicious biscuit recipe. Try it in all its variations:

Ingredients

Four eggs A cup of sugar A grated orange or lemon Three teaspoons of bicarbonate of soda. Flour as needed.

Beat the eggs well, adding the sugar and the grated lemon or orange as you beat; then add the flour with the bicarbonate gradually, until the dough becomes firm enough to roll out. Then roll the dough thin, to a thickness of

one-eighth of a qirat; cut it with fancy cutters and lay the pieces on a tray. Then brush the top of each biscuit with a little egg yolk beaten with a little powdered sugar, and bake in a slow oven.

And you can, Madam, work variations on this dough to produce other kinds of biscuits:

Cocoa biscuits: You may add to this recipe two tablespoons of cocoa sweetened with sugar, and you will obtain cocoa biscuits...

Nut biscuits: And you may add to this recipe half a cup of hazelnuts or pistachios, pounded and mixed into the flour, and roll the dough out with hazelnuts and pistachios on both sides, and you will obtain nut biscuits.

Fruit biscuits: And if you wish, add to the same recipe a third of a cup of raisins, or orange or

lemon peel candied in sugar and the like, cut into small pieces and mixed into the flour, and you will likewise obtain fruit biscuits.

Coffee biscuits: You may also add to this recipe two tablespoons of well-boiled coffee, and you will obtain coffee biscuits...
