المطبخ - مربى البرتقال

In compliance with the readers' wishes, we shall guide you, Madam, to some new recipes for you to apply yourself in your kitchen — beginning with them from now on.

Orange Jam — the quantities by the teacup

1 - Oranges — 1
2 - Sour lemons — 1
3 - Water — 3
4 - Sugar — 5

Method:

1 - Wash the oranges and the sour lemons, and cut them into small pieces, keeping their juice, until you obtain the required quantity.

2 - Put the water and the sugar over the mixture and set it over a strong fire, stirring constantly until it boils; then the vessel is covered and left over a low fire.

3 - When the liquid has grown so thick that it falls from the side of the spoon two drops together, the jam is then done; it is taken off the fire and put into tightly sealed jars...

4 - It is preferable that the jam rest a few days before one begins to eat it.
